
These fried bananas are a quick simple treat and easy to do any time because you can keep the main ingredients in your pantry - no last minute shopping ;)
**Kids can help with the preparation,
but the frying in hot oil is best left to someone more experienced**






Ingredients:
1 cup rice flour
1 cup brown sugar
1/4 tsp. cinnamon
1/2 cup coconut milk (add more as needed)
bananas (firm)
cooking oil
Pour just enough oil in the bottom of a saute pan to cover and turn the heat up to medium-high.
Add first three ingredients and stir well.

Pour coconut milk into separate bowl.

Slice banana into 1/2 inch slices.

Dip banana slices in coconut milk.

Then, coat well in flour mixture.

Gently put in hot oil. Fry on one side just long enough to get lightly brown and crispy - a minute or less- and then flip to other side to brown.

Drain on metal rack and let cool slightly.

Eat while they're still warm and crispy.

I replaced the pan with fresh oil when it got too dark. Using firm bananas and cooking at a high temperature helps to keep the bananas from getting too soft inside after cooking. Depending on how many you want to make, you may need to make more flour mixture and refill the coconut milk.
